I might be a little slow here but what is the “interact” option used for on the note cards.
How are some of you using this to help me understand it.

Interact is primarily used for quickly editing attributes / carrying out common actions on cards – it’s especially useful when combined with multi-select.
I’ve improved the Help Center with a new Interact article to explain this further. I hope that helps, let me know if anything is unclear.
